4 large baking potatoes (about 2 pounds)
1/2 cup Dijor mustard
1/4 cup Honey
1/2 teaspoon crushed dried thyme leaves
Salt and pepper to taste
1. Peel the potatoes and cut each one into 6 to 8 pieces. Cover the potatoes with salted water in a large saucepan and bring to a boil over medium-high heat. Cook the potatoes for 12 to 15 minutes or just until tender. Drain.
2. Combine the mustard, honey, and thyme in a bowl. Toss the potatoes with the mustard mixture until evenly coated. Arrange the potatoes on a foil-lined baking sheet coated with nonstick cooking spray. Bake at 375 degrees for 20 minutes or until the potatoes begin to brown around the edges. Season to taste with salt and pepper.
